Savory herbs de provence french toast + scrambled eggs with cruciferous veggie mix & parmesan flakes. Recipe by moi:
*herbs de Provence to taste
*dried basil to taste
*salt + pepper to taste
*1.5 cups cruciferous veggie mix from Trader Joe’s
*flakes of Parmesan cheese to taste
*10 thin slices of seeded sour dough baguette (or your bread of choice)
*olive oil (or your favorite) for your pan
*2 tablespoons water
Crack eggs in bowl. Add herbs, salt, pepper. I like a lot of flavor, so my herb pour was generous. Mix together until yolks are broken and herbs are even.
Slice baguette and dump pieces in egg mixture. Sink and let sit until all pieces are wet.
Pour oil in pan. I use a large nonstick pan so I don’t need to use a lot. Then add veggies. Let sit for 30 seconds or so, then add water. Cover with lid and let sit until greens are extra vibrant (about 2-3 minutes?).
Take off lid. Stir veggies and move to one side of the pan so that half is left over. Pour egg mixture over veggies, holding bread back with a fork. Then add bread to the other side, so that each piece is on the pan.
Add cheese. Mix & flip as needed until light golden brown on both sides. Serve hot.
